Strawberry Carpaccio with Basil Mint Pesto

Basil mint is an exquisite variety of mint with a basil scent. This aromatic plant goes perfectly with strawberries.

Strawberry carpaccio and its sweet basil mint pesto

To make this recipe you will need the following ingredients: 1 bunch of basil mint (about 10 stalks) – 2 or 3 branches of lemon balm – the juice of half an organic lemon and its zest – 35 ml of almond oil – a good tablespoon of ground almonds – 2 teaspoons of cane sugar – 250 grams of strawberries.

  • Wash the basil mint and lemon balm. Then let them dry well before using them.
  • Wash and hull the strawberries. Wipe them, then cut them into thin slices to make a carpaccio. Then carefully place the strawberry slices fanned out on a plate.
  • To make the sweet pesto: put the rest of the ingredients in a blender (the basil mint, the lemon balm, the juice of half an organic lemon and its zest, 35 ml of almond oil, a good tablespoon of ground almond, and 2 teaspoons of cane sugar). Mix for a few moments until you obtain a pesto-like texture. A little advice, to prevent the leaves from turning brown, avoid mixing too long 😊
  • Then pour your sweet pesto over your strawberry carpaccio.
