Salicornia europaea or glasswort is a halophytic annual dicot which grows in various zones of intertidal salt marshes. Salicornia europaea is highly edible, either cooked or raw. In England, it is one of several plants known as samphire (see also rock samphire). Samphire is usually cooked, either steamed or microwaved, and then coated in butter or olive oil.

There are several uses of sheep sorrel in the preparation of food including a garnish, a tart flavoring agent, a salad green, and a curdling agent for cheese.
