Ornithogalum pyrenaicum, also called Prussian asparagus, wild asparagus, Bath Asparagus, Pyrenees star of Bethlehem or spiked star of Bethlehem, is a plant whose young flower shoots may be eaten as a vegetable, similar to asparagus.
This unusual and attractive plant is an uncommon native wild flower. However, although in this country only found in a few places, where it does grow, it often does so with some abundance.
It has very narrow, glaucous leaves and bears in early summer large spikes of up to 50 green-striped, greenish-white or pale yellow, star-like flowers, each almost an inch across. As the common name suggests, the young spikes have been eaten like Asparagus.
